Ingredients for 6 persons
- 4 egg yolks
- 4 egg albumens
- 6 tablespoons of sugar
- 1/2 vanilla splint
- 3 tablespoons of Amaretto liquor
- 250 g of Amaretti
- 500 ml of fresh whipping cream
- 100 g of dark chocolate
Keep the cream in a steel container in the freezer until ready to use.
Place a container for a double boiler on the stove and pour the egg yolks plus 4 tablespoons of sugar in the bowl. Then mount with a whisk until frothy. Combine now 3 tablespoons amaretto and half the vanilla and whip the content. Remove from heat and discard the vanilla. Chop Amaretti keeping 10 of them as final garnishing. Combine the crushed Amaretti to the mixture and mix throughly. Beat the cream until the mix is stiff. Then add 2 tablespoons of powdered sugar. Stir in the first mixture very gently. Put the dough into the molds, cover'em and put in the freezer for about 2 hours. Then serve with melted chocolate and an Amaretto for garnish.
