Christmas Ravioli with pine nuts and raisin

Ingredients for 4 persons:

  • 350 g of fresh fillo dough
  • 600 g of boiled spinach
  • 200 g of ricotta cheese
  • 80 g of butter
  • 40 g of Italian Parmesan
  • 30 g of raisin
  • 30 g of toasted pine nuts
  • 2 tablespoons of extra virgin olive oil
  • 1 minced onion
  • 1 egg
  • 1 small bunch of basil
  • half garlic clove
  • salt and pepper


Prepare the filling and start to blonde onion and garlic in a pan with oil, in where you will then cook for about 2-3 minutes previously boiled and chopped spinach, pine nuts, drained raisins and half quantity of chopped basil.  Remove the pan from heat and let it cool: then transfer into a mixing bowl and stir in the egg, ricotta cheese and two tablespoons of grated Parmesan cheese. Let stand in refrigerator for 1 hour. Add salt and pepper to mix well. Roll out the dough into a thin sheet, cut into regular square using our multifunction scissors Cuterina. Put now the filling in and give the dough the typical shape of Italian ravioli. Boil in salted water and serve with melted butter, basil and Parmesan.

If you do prefer other types of vegetables, you could replace spinach with radicchio or beets: very tasty and crispy!
